- 3 ripe bananas, mashed – 1/3 cup melted coconut oil or vegetable oil – 1 teaspoon vanilla extract – 1 cup gluten-free all-purpose flour – 1/2 cup almond flour – 1 teaspoon baking soda – 1/2 teaspoon baking powder – 1/2 teaspoon salt – 1 teaspoon ground cinnamon – 1/2 cup coconut sugar or brown sugar – 2 large eggs, beaten – 1/2 cup chopped nuts (optional) – 1/2 cup chocolate chips (optional)

Preheat your oven to 350°F (175°C). Grease a standard-sized loaf pan and set it aside.

Step 1

In a large mixing bowl, mash the ripe bananas with a fork until smooth. Add melted coconut oil, vanilla extract, and beaten eggs. Mix well until the ingredients are combined.

Step 2

In a separate bowl, whisk together the gluten-free all-purpose flour, almond flour, baking soda, baking powder, salt, ground cinnamon, and coconut sugar (or brown sugar).

Step 3

Gradually fold the dry ingredients into the wet mixture until a smooth batter forms. If desired, gently fold in chopped nuts or chocolate chips for an extra layer of flavor and texture.

Step 4

Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
