Sweet Potato Crust Quiche (with Goat Cheese and Leeks)
Quiche recipes are always great for family gatherings, whether you’re coming together for breakfast, brunch, or any other meal. They’re easy to make ahead and serve to a crowd. It’s a one-dish meal that everyone loves!
– 1 large sweet potato, peeled and grated– 2 tablespoons olive oil– 1 leek, thinly sliced– 6 large egg– 1 cup milk (whole or any preferred type)– 4 ounces goat cheese, crumbled– Salt and pepper to taste– Fresh herbs (such as thyme or chives) for garnish
Preheat your oven to 375°F (190°C). In a large bowl, mix the grated sweet potato with a pinch of salt. Press the sweet potato mixture into the bottom and up the sides of a greased pie or quiche dish, forming an even crust. Bake the crust for about 15 minutes, or until it's set and lightly golden.
While the crust is baking, heat olive oil in a pan over medium heat. Add the sliced leeks and sauté until they become soft and golden brown, about 5-7 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
In a mixing bowl, whisk together the eggs and milk until well combined. Season the mixture with salt and pepper.
Spread the sautéed leeks evenly over the pre-baked sweet potato crust. Pour the egg and milk mixture over the leeks. Sprinkle crumbled goat cheese on top.
Place the quiche in the preheated oven and bake for 30-35 minutes or until the center is set and the top is golden brown. Let it cool for a few minutes before slicing. Garnish with fresh herbs, and serve warm.
