Red Lentil Curry  Recipe

Hearty red lentil curry. It's a terrific main dish instead of a side like Indian dhal. The ingredient list may scare you, but this recipe is simple to create. This meal goes well with basmati rice.

– 2 cups red lentil – 3 cups water, or more as needed – 1 tablespoon vegetable oil – 1 large onion, diced – 2 tablespoons curry paste – 1 tablespoon curry powder – 1 teaspoon ground turmeric – 1 teaspoon ground cumin – 1 teaspoon chili powder – 1 teaspoon salt – 1 teaspoon white sugar – 1 teaspoon minced garlic – 1 teaspoon minced fresh ginger – 1 (14.25 ounce) can tomato puree




Lentils should be washed in cold water until the water becomes clear.

STEP  1 .

Put lentils in a pot with enough water to cover; boil and lower heat to medium-low. Add water as needed to cover lentils and cook for 15–20 minutes until soft. Drain.

Caramelize onions in vegetable oil in a large skillet over medium heat for 20 minutes.

Mix curry paste, curry powder, turmeric, cumin, chili powder, salt, sugar, garlic, and ginger in a large bowl; mix into onions.

 Turn heat to high and whisk regularly until aromatic, 1–2 minutes. Add tomato puree and lentils; heat.
