Oat flour muffins are a wholesome and versatile treat that can be customized with a variety of mix-ins to suit your taste preferences. Using oat flour as a base not only adds a nutty flavor but also provides a hearty texture, making these muffins a healthier alternative to traditional baked goods. Follow these five simple steps to whip up a batch of delicious oat flour muffins with your favorite mix-ins.

 – 2 cups oat flour – 1/2 cup sugar (adjust to taste) – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 2 large egg – 1 cup Greek yogurt – 1/2 cup milk (dairy or plant-based) – 1/4 cup melted butter or oil – 1 teaspoon vanilla extract – Endless mix-ins of your choice (e.g., chocolate chips, berries, nuts, shredded coconut, etc.)

Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners or grease it lightly.

Step 1

In a large bowl, whisk together the oat flour, sugar, baking powder, baking soda, and salt. Ensure that the ingredients are well combined, creating a uniform dry mixture.

Step 2

In a separate bowl, beat the eggs and then add the Greek yogurt, milk, melted butter or oil, and vanilla extract. Mix until the wet ingredients are thoroughly combined.

Step 3

Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix; a few lumps are okay. This will help ensure a tender texture for your muffins.

Step 4

Fold in your chosen mix-ins, such as chocolate chips, berries, nuts, or shredded coconut, into the batter. Distribute the batter evenly among the muffin cups.
