Oat Flour Banana MuffinS


Oat Flour Banana Muffins are a wholesome and delicious treat that combines the natural sweetness of ripe bananas with the nutty goodness of oat flour. - 2 ripe bananas, mashed – 2 egg – 1/2 cup melted coconut oil or melted butter – 1/2 cup honey or maple syrup – 1 teaspoon vanilla extract – 1 1/2 cups oat flour – 1/2 teaspoon baking soda – 1/2 teaspoon baking powder – 1/2 teaspoon cinnamon (optional) – 1/4 teaspoon saltled



Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups to prevent sticking.


Step 1

In a large mixing bowl, combine the mashed bananas, eggs, melted coconut oil or butter, honey or maple syrup, and vanilla extract. Mix well until the ingredients are well combined.

In a separate bowl, whisk together the oat flour, baking soda, baking powder, cinnamon (if using), and salt.

Add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
