Whole spices and fried onions give this Indian rice dish its flavor. It makes a huge difference to soak the basmati rice before making it. You can eat this rice with your favorite Indian stew or dal (lentils). Tell people not to bite into the whole spices!
– 1 ½ cups basmati rice– 2 tablespoons vegetable oil– 1 (2 inch) piece cinnamon stick– 2 pods green cardamom– 2 whole clove– 1 tablespoon cumin seed– 1 small onion, thinly sliced– 2 ½ cups water– 1 teaspoon salt, or to taste
Put rice in a bowl and add enough water to cover it. Leave it alone for 20 minutes to soak.

Also, heat the oil in a big pot or saucepan over medium heat for the last 10 minutes of the soaking time. Put in the cloves, cinnamon stick, and cardamom pods. Then add the cumin seed and mix it in.
Stir and cook for about one minute, until the nuts smell good and are toasted. Then add the onion. It will take about 10 minutes of cooking the onion until it turns a rich golden brown color.
Take the rice out of the water and add it to the pot. For about 3 minutes, cook and stir the rice until it tastes slightly toasted. Bring to a boil with water and salt. Cover it and turn down the heat.
Let it cook on low heat for 15 minutes, or until all the water is absorbed. If you want to serve it right away, fluff it with a fork after 5 minutes of sitting.
