 – 10 fresh jalapeno – 8 oz cream cheese, softened – 1 cup shredded cheddar cheese – 1 cup gluten-free breadcrumb – 1/2 cup grated Parmesan cheese – 2 large eggs, beaten – 1 teaspoon garlic powder – 1 teaspoon onion powder – 1/2 teaspoon smoked paprika – Salt and pepper to taste – Cooking spray

Wash and cut the jalapenos in half lengthwise. Remove the seeds and membranes for a milder flavor or leave them for extra heat. Set aside.

Step 1

In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.

Step 2

Take each jalapeno half and generously fill it with the cream cheese mixture, ensuring an even distribution.

Step 3

In a shallow dish, combine the gluten-free breadcrumbs and grated Parmesan cheese. Dip each stuffed jalapeno half into the beaten eggs, then coat it thoroughly with the breadcrumb mixture, pressing gently to adhere.

Step 4

Preheat the oven to 375°F (190°C). Place the coated jalapeno poppers on a baking sheet lined with parchment paper and lightly coated with cooking spray. Bake for 20-25 minutes or until the poppers are golden brown and crispy.
