Gluten-Free Green Bean Casserole

– 1 pound fresh green beans, trimmed and halved – 2 tablespoons olive oil – 1 onion, thinly sliced – 2 cloves garlic, minced – 8 oz mushrooms, sliced – 2 tablespoons gluten-free all-purpose flour – 1 cup gluten-free chicken or vegetable broth – 1 cup unsweetened almond milk (or any non-dairy milk) – 1 teaspoon dried thyme – Salt and pepper to taste – 1 cup gluten-free crispy fried onions (store-bought or homemade)



Preheat your oven to 375°F (190°C). Meanwhile, bring a large pot of salted water to a boil. Blanch the green beans for 3-4 minutes until they are bright green and slightly tender. Drain and set aside.
