Gluten-Free Apple MuffinS


These sweet and pillowy apple cinnamon muffins are packed with the flavors of fall and could not be more tender, perfectly sweet, and totally delicious. Bake up then keep on hand for easy breakfasts, snacks, and every moment in between!


– 2 cups gluten-free all-purpose flour – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1 teaspoon ground cinnamon – 1/2 teaspoon ground nutmeg – 1/2 cup unsalted butter, melted and cooled – 1/2 cup brown sugar, packed – 1/4 cup honey – 2 large eggs, room temperature – 1 teaspoon vanilla extract – 1/2 cup buttermilk – 2 cups finely chopped apples (about 2 medium-sized apples) – Optional: 1/2 cup chopped nuts (such as walnuts or pecans)



Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease each cup with butter or cooking spray.


Step 1

In a large mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

In a separate bowl, beat together the melted butter, brown sugar, honey, eggs, and vanilla extract until the mixture is smooth and well incorporated. Add the buttermilk and mix again.


Step 3

Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Fold in the chopped apples and nuts (if using) until evenly distributed throughout the batter.


Step 4

Spoon the batter into the prepared muffin cups, filling each about two-thirds full. Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
