– 2 tablespoons ghee or oil – 2 pounds carrots, grated – 1 ½ quarts whole milk – 2 cups white sugar – ½ cup raisins or sultana – 1 ½ teaspoons ground cardamom – 1 pinch saffron thread – 8 tablespoons chopped pistachio nut




In a large saucepan, melt ghee on medium and add carrots. Just cook and stir for 3 minutes.

Turn up heat, add milk, and boil for 5 minutes, stirring frequently. Reduce heat to low and simmer, uncovered, stirring periodically, for 1 hour to evaporate moisture.

Bring carrot mixture back to boil; add sugar, raisins, cardamom, and saffron. Cook and stir for 10 minutes to thicken.

Serve carrot halwa in 8 dishes. Add 1 tablespoon pistachios to each serving. Warm or chill before serving.
