Banana Breakfast Cookie


Banana breakfast cookies are full of wholesome ingredients and perfect for busy mornings! Make a batch to take for on-the-go breakfasts all week!


1. 2 ripe bananas, mashed 2. 1 cup rolled oat 3. 1/2 cup almond butter 4. 1/4 cup honey or maple syrup 5. 1/2 teaspoon vanilla extract 6. 1/2 teaspoon cinnamon 7. 1/4 teaspoon salt 8. 1/2 cup chopped nuts or seeds (optional) 9. 1/4 cup dried fruit (such as raisins or cranberries) (optional) 10. 1/4 cup chocolate chips (optional)



Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.


Step 1

In a large bowl, combine the mashed bananas, almond butter, honey or maple syrup, and vanilla extract. Mix well until all the wet ingredients are well incorporated.


Step 2

Add the rolled oats, cinnamon, salt, and any optional ingredients such as chopped nuts, dried fruit, or chocolate chips. Mix everything together until you have a consistent cookie dough-like mixture.


Step 3

Scoop out tablespoon-sized portions of the dough and place them on the prepared baking sheet, leaving some space between each cookie. Use the back of the spoon or your fingers to flatten and shape them into cookie rounds.


Step 4

Bake in the preheated oven for 12-15 minutes or until the edges are golden brown. Keep an eye on them to prevent over-baking. Once done, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
